I've tried over 100 banana recipes and this is by far my favorite. Most banana recipes either taste dusty or like dark toffee to molasses, this one tastes like a perfectly ripe banana with some apple. Lorann Cotton Candy can be substituted for TFA, CAP, FW, FLV or any that are 10% Ethyl Maltol (so not Blue or Circus) . He also puts 0.25% TFA Smooth in to reduce harshness but I find that it dulls flavour for me so I left it out.
I added FW Sweetener because it is 10% Sucralose without Maltol (TFA) or Citric Acid (Capella). If you use TFA Sweetener then leave out the Cotton Candy.
